Why ours taste different
Most commercial cupcakes are built on premix and shortening because both forgive bad scheduling. Ours are not. We cream real butter with unrefined sugar, weigh every batch to the gram, and bake in rounds through the morning so the counter never holds a cupcake older than a few hours.
The buttercream is Swiss meringue — lighter and far less sweet than the supermarket kind — and it is piped to order for boxes of twelve or more. If you have ever scraped frosting off a cupcake, we would like to change your mind.
